Re-posted from September 6, 2015 with a few updates…. My ever-popular soup I’m showcasing again on this cold winter day. This soup is probably the best soup I have ever had…I’m so excited to share it with you! I know it may sound complicated and hard to make but trust me, it’s one of the easiest soups I have ever made. Carrots are something we take for granted and have always had them in our lives in abundance. They’re easy to grow in our climate and usually inexpensive and moms like them for their ease and versatility for kids and portable ‘snacking’ food. Who would think that you can make this delicately, delicious soup from carrots. I added fennel to give it the full, rich taste of sweetness and it balances the mild curry flavour. I think this will be my weekly soup for the next month or two. I simply can’t get enough…

What are the holidays without STUFFING?! Please don’t make this just for your ‘special’ guests (that are on restrictive allergy-friendly diets). This is a recipe for EVERYONE to enjoy because it is gluten-free and vegan and that means no wheat, gluten, dairy, chicken stock or butter (high cholesterol causing ingredient). You’ll love this recipe. Make a ton of it, as I’m certain it will be the main course. Vegan & Gluten-Free Stuffing Ingredients: 11 cups of fresh or stale gluten-free and vegan ½” bread cubes (I use a Quinoa bread from Thornbury Bakery) 2 Tbsp + 1 Tbsp olive oil (go for a good quality brand) 1 Tbsp melted Earth Balance – I choose Soy-Free 1 Tbsp fresh garlic, minced 1 cup organic onion, finely chopped 1 ½ cups organic celery, finely chopped ½ cup fresh parsley, finely chopped 1/4 cup fresh thyme, chopped finely 1 tsp dry rubbed sage 1 tsp dried…

Has our Summer flown by that quickly? I think we need to take advantage of the last couple of weeks of it and get all the beautiful produce while we can at the local farmer markets and in particular,  their freshly harvested cobs of corn. Corn on the cob!! Who doesn’t love this? Especially corn on the cob, roasted on the BBQ – It is synonymous with summer! Sweet summer fresh corn is so amazing eating it right off the cob but here’s another way to enjoy it (and perhaps save the dental floss while chewing on the cob). This is an easy and delicious recipe to work with and is worth an extra step or two because once you barbecue the corn, there is no going back basic corn. Do you ever need a giant helping of comfort food??  Here is a quick hearty dinner and if you make enough,…

I’m already thinking chilly weather and soup season and wanted to change up my greens that I tend to eat daily. For some reason, it’s been a while since I’ve had broccoli and started craving it over the weekend. This soup was an a easy make for me and made enough for lunch yesterday and today. It’s nutritious, easy to make and you can freeze it for future lunches or dinners. I love cooking with non-dairy milks and creams and LOVE that I get ZERO bad cholesterols in my diet. Only healthy fats for me (if only my mom would listen). Broccoli is also an amazing source of calcium (along with kale). Who needs dairy when we have our greens?! Creamy Broccoli Soup Makes about 8 servings (1 cup each) 1 medium yellow onion, diced 2 garlic cloves, minced 2 tsp olive oil 2 medium organic potatoes, scrubbed and diced 2 medium…

Need a quick lunch (or breakfast too)? Too busy to find the time to make a sit-down meal? The perfect lunch can be a smoothie and it really can make more nutritional sense then a hurried lunch that you may not have time to make in the first place. There really is nothing more simple than assembling ingredients in a blender and pressing ‘start’. I’ve been busy with book writing and websites and other laptop work and I can relate to not wanting to step foot in the kitchen to make a ‘meal’. So I grabbed the blender and put some solid nutrition in it. SunWarrior is a crazy delicious brand of raw Superfood Protein and made with other raw and non-GMO Superfoods. It’s my only go-to source of protein powder (raw, vegan, gluten-free, Non-GMO, soy-free and organic) and also my choice of ultra healthy superfood greens for my diet. This…

Oh! To be a complete chef with all the tools to make your kitchen hum, it must never be overlooked the versatility of vegan cashew cream. It is a staple in our kitchen and can be stored in the fridge (3 days) or freezer (4 months but needs to be re-blended) so it’s ready to go at any moment’s notice. It is used as you would for creamy substitutions in so many creative ways: heavy creams for soups, mashed potatoes and sweet potatoes, pasta sauces, gravy, fillings for ravioli – the list is endless. The trick is to use RAW cashews only – this way they will not impart any flavour into the dish you are creating and they are solely your fat source to attach flavour too. (no you cannot use roasted) Your best bet too is to soak them overnight. Soaking allows them to be soft and break…

This is a guilt-free treat you will love, I promise. A delicious treat for Valentine’s Day for the kids and the other ‘big kids’ at home. Talk about a twist of fun here. Is this really HEALTHY? Nutritious? Really??! Most would say they’ve never thought of mixing ice cream with beet juice….Beet Juice?! With Vanilla Bean Coconut Milk Ice Cream? Yes, you’ve got to be crazy. Beets help beat cancer, anemia, and urinary tract infections. It bolsters your blood with iron and keeps it fully oxygenated and this is a wonderful way to sneak it in to your diet. The health-benefits of chocolate have been known to us for some time now, but there is more to chocolate that we need to know. Did you know that chocolate and cacao are NOT the same? True, there is a clear distinction between commercial grade chocolate which has NO health benefits and…

This is what I made for myself today. Simple and very refreshing! Love this!! I always believe that your day must start from the inside out and to take the time to make your own juice will reward you on so many levels. This recipe can be doubled to make twice as much and nourish you for a little while longer. You can easily drink this juice from a travel cup and drink it on your drive to the office or to drop the kids off at school. If you make extra, this is the perfect nutrition for the kids to start their day too. A healthy body gives them a healthy mind to learn well. Green Juice Recipe 1 lemon 5 kale leaves handful mint handful spinach 1 knob ginger 2 cucumbers (medium) 1 red apple  Juice everything together in your juicer in this order and then pour and enjoy.…

Teff Brownies. Who would’ve thought? For most, I bet you have never heard of this nutritious grain/flour. I personally love the teff grain and experienced it a few years back in an Ethiopian restaurant and admired the taste of the flour they used to make their flat bread called enjera. One of the smallest grains in the world, it dates back to over 4000 years on this planet. I think what I love about eating gluten-free baking is that the grains and flours can be so densely nutritious. Teff is about 12% protein and it leads all other grains in its calcium content. A cup of cooked teff offers about 123mg of calcium which is comparable to a half-cup cooked spinach. Teff is also an excellent source of vitamin C, a micronutrient not commonly found in grains. It’s also very high in fibre and B vitamins. Due to it’s earthy…

Who doesn’t love Italian food? The language, the love, the food…..ahhhhhhhhhh…. sigh. Last night was no exception for me. I totally wanted a beautiful, rich and yet gentle sauce that was full of ripe tomato flavour and had the depth of fresh basil running through it. Simple tomato sauce. Yes, there is an art to it. You must make sure you don’t overcook it and you cannot under cook it either. It needs to taste ‘fresh’ and light yet not harsh or still tart or bitter with the fresh tomatoes. Here’s my perfect recipe. I make it at least once a month and use it for many dishes like Polenta, Pasta, Lasagna and Gluten-Free Sweet Potato Gnocchi (Recipe to follow soon). Kelly’s Tomato Sauce Ingredients: 3 tbsp REAL olive oil 1 yellow onion, diced 1 large shallot, finely diced (you need to use shallots as they add a richness you can’t…
