What does it mean to be Gluten-Free? It’s estimated that 1 in 133 Canadians or 250,000 people have celiac disease (and it’s growing) and approximately 3 million Americans. It’s a lifelong, genetically based disorder that occurs when gluten – a protein found in wheat, rye and barley – triggers an abnormal immune response that damages the lining of the small intestine interfering with the absorption of vital nutrients. It can be painful and debilitating. Symptoms can include anemia, diarrhea, arthritis, intense abdominal pain, weight loss and, in children, delayed growth. But most people have symptoms that are subtler, such as bloating, excess gas or fatigue. People who have gluten ‘sensitivity’ will also benefit from a gluten-free diet. These people test negative for celiac disease but react poorly to gluten and may report abdominal pain, headaches, irritability, depression and chronic fatigue. Many of us go through our days awake, but following patterns we’ve developed over the years. We are going through the motions, doing things at home, online, at work without much forethought. Contrast this with the idea of an Intentional Life: everything you do is done with consciousness, fulfilling one of your core values (compassion, for example). What a SURPRISE it was!!! This was the invitation that everyone received!! Wow! Thank you to Ken (my creative genius) and everyone else who made this happen!! This ‘grateful’ post to my family is a little late as the party was September 18th but Ken and I decided to take off for a few days to Montreal right after the party. Awesomeness at 50. Celebrating my half century today! (and being cool in my own skin). My goodness it’s here and I’m okay. I made it! I’m the same person that I was 20, 30, 40 years ago….but I have to say, only a better, more refined and updated model. 🙂 To think of all the ups and downs, and good and bad struggles in my life and to have mastered them all and be where I am today gives me these goose bumps and shivers through my core. The Secrets of Solitude – Enjoying Quiet Time Our world is plugged in. Everywhere we turn, people are talking and texting on phones, listening to iPods, scrolling relentlessly on tablets, and deeply engaged on laptops.  We are connected through chargers and WiFi in the airwaves – letting these gadgets rule our lives, our very own neural networks and essence of living, our relationships and ultimately our joy and happiness. There are many benefits of solitude.  When we are alone with our thoughts, it gives us time to listen to the world around us, as well as the world going on inside of us. Nutrient Density measures the benefits you get from a food compared to the number of calories it contains. Nutrient-dense foods give you the most nutrients possible for the fewest calories. For example, some energy bars provide 15 percent of your daily folate (a B vitamin found naturally in certain foods- especially leafy greens) requirement for about 200 calories. A cup of raw spinach, on the other hand, packs the same folate punch for only 7 calories. Foods with high nutrient density provide relatively few calories (with tons of antioxidants, vitamins and minerals) and consequently give you a feeling of fullness with smaller portions. Your body gets a chance to respond and send a signal to your brain and say, “I’m full”, because it is absorbing all those healthy, delicious nutrients. The Universe always works in a dynamic exchange with your body, mind, and environment. In nature, giving and receiving different aspects of the flow of energy in the universe are what permit the continual bounty we enjoy and is what we call life.
