Because, dear Erinn, no one ever shared with me how much I could love another soul as much as I love you. Because, through you, I truly discovered the meaning of eternal love, devotion, compassion, empathy, selflessness, forgiveness, self-love, respect and loyalty. Because, sweet girl, as your mother, I now can fully comprehend, as crazy as it might sound, the full depth of awe-inspiring love in my heart and equally so, at the other side of karma, the most breathtaking hurt and deepest pain. You’ve provided for me this gift to surrender by going deep and learn so much more about myself. Because of you, I have learned the value of being the student, as well as, the teacher. The roles work both ways for us. Even though I’m passionate, and sometimes spirited, spicy 😉 and misunderstood, I am so grateful for these lessons. (You’re a tough teacher 👊🏻). Because…
I’m already thinking chilly weather and soup season and wanted to change up my greens that I tend to eat daily. For some reason, it’s been a while since I’ve had broccoli and started craving it over the weekend. This soup was an a easy make for me and made enough for lunch yesterday and today. It’s nutritious, easy to make and you can freeze it for future lunches or dinners. I love cooking with non-dairy milks and creams and LOVE that I get ZERO bad cholesterols in my diet. Only healthy fats for me (if only my mom would listen). Broccoli is also an amazing source of calcium (along with kale). Who needs dairy when we have our greens?! Creamy Broccoli Soup Makes about 8 servings (1 cup each) 1 medium yellow onion, diced 2 garlic cloves, minced 2 tsp olive oil 2 medium organic potatoes, scrubbed and diced 2 medium…
What does it mean to be Gluten-Free? It’s estimated that 1 in 133 Canadians or 250,000 people have celiac disease (and it’s growing) and approximately 3 million Americans. It’s a lifelong, genetically based disorder that occurs when gluten – a protein found in wheat, rye and barley – triggers an abnormal immune response that damages the lining of the small intestine interfering with the absorption of vital nutrients. It can be painful and debilitating. Symptoms can include anemia, diarrhea, arthritis, intense abdominal pain, weight loss and, in children, delayed growth. But most people have symptoms that are subtler, such as bloating, excess gas or fatigue. People who have gluten ‘sensitivity’ will also benefit from a gluten-free diet. These people test negative for celiac disease but react poorly to gluten and may report abdominal pain, headaches, irritability, depression and chronic fatigue. There’s no evidence, however, that following a gluten-free diet will…
Not Just Vegan – Why eat “Whole Food” Vegan Many people jump into a trendy vegan diet with the thought that as long as they aren’t eating animal products (meat, fish, dairy, etc), they will be just perfectly healthy. However, white pastas, sugary cookies (did you know that Oreos are vegan?), white flour cakes and breads or even processed ‘vegan faux meats’ does not make for a healthy vegan! Vegans should think of themselves more as herbivores – true whole-food, plant eaters – with a focus on Whole plant foods (as opposed to veggie chips in a bag!). If it grows from the ground and it’s still intact – go for it. If it somehow ends up in a box with lots of words that need special decoding, step away from it. Just because a person has cut animal products out of their diet does not mean they are healthy. There…
