Being my daughter’s mother is my greatest honour.  Today, is April 19, 2016, and twenty-six years ago, I became the greatest job that would ever be bestowed upon me. I became a mom. (Happy Birthday Erinn!). Thirty-seven hours later, with a ton of physical trauma, and a spiritual transformation that only I could intimately understand, this would be the most miraculous journey I could ever imagine. I’ve realized this much, that I was young when she was born (too young, I tell myself at times while doing some deep soul-reflection over these past 26 years). Through heartache, through laughter, through giggles and late night talks and snuggles and story-telling too and millions of phone calls, shopping excursions, texts and hugs and kisses, through our lessons of greatness and lessons of smallness, our triumphs and failures and ultimate lessons, this will always be my greatest honour in my entire life.  To…

Sunday, December 6th, (tomorrow) marks a really big day for us. Three years ago we opened the doors of our dream, Kelly’s Bake Shoppe. It has been an incredible 3 years and now, on top of it all, including ranking 3rd in the WORLD on Buzzfeed’s bucket list, we even have a cookbook, coming out in April 2016. It’s called Made With Love, (published by Penguin Random House). There have been so many triumphs and learning curves thrown at us along the way and yet, here we are still standing. We do have so much to be grateful for and so much to celebrate and that is what keeps me sane every single day. I simply rejoice in all the smiles and good we are able to do for others and that is my definition of success. It’s all about, “Believing in Magic” and this is what we do every day.…

I just wanted to take today to share with you all as to how incredible it is to live, work and play in Downtown Burlington. I am so blessed! I wanted to share with you why living this way has become so important to me and to focus on all the good stuff. I sometimes don’t realize how great I have it until we travel to other towns and cities and get a chance to see how others live. We always drive away and say, “Wow, we have it so good back home in Burlington!” With a population of about 187,000 in the City of Burlington overall and a downtown core population of about 6,500, I’m beginning to really be grateful and love and enjoy the more quiet, yet vibrant, hustle & bustle of Burlington over living in Toronto from my previous years. What an amazing turnout…..Tuesday, June 3rd was our big celebration and we are loving that we’ve been open FOUR (4) years now and changing lives through eating better. On our last count, we think over 1200 people stopped by to visit. How is that possible??! My gosh, we are just this little family with big ideas. Every day we are so grateful and blown away as to how far of a reach we have on this beautiful planet. The UN’s theme for this year’s International Women’s Day 2014 is “Inspiring Change” Equality for Women is a Progress For All. Being the co-owner of Kelly’s Bake Shoppe and Lettuce Love Café, with my daughter Erinn has been an eye-opening experience for the two of us as women, to be able to open and run successfully BUSY businesses. It has not always been easy and it absolutely has had its ‘chauvinistic moments’ for example, when trying to establish ourselves with financial resources at the bank (“Are you going to have your husband sign with you?” What?!? Do most men need their wife to sign their bank loans?) or day-to-day activities with suppliers that ask if there is a man to speak to, to business meetings with lawyers and accountants that direct their conversations towards the men in the room (Hello! I’m sitting here too!). It has never been a dull…

Teff Brownies. Who would’ve thought? For most, I bet you have never heard of this nutritious grain/flour. I personally love the teff grain and experienced it a few years back in an Ethiopian restaurant and admired the taste of the flour they used to make their flat bread called enjera. One of the smallest grains in the world, it dates back to over 4000 years on this planet. I think what I love about eating gluten-free baking is that the grains and flours can be so densely nutritious. Teff is about 12% protein and it leads all other grains in its calcium content. A cup of cooked teff offers about 123mg of calcium which is comparable to a half-cup cooked spinach. Teff is also an excellent source of vitamin C, a micronutrient not commonly found in grains.
